Student-run coffee shop to run as a course

Blue Brew, a Millikin University student-run coffee shop, will officially open its doors on Wednesday, Nov. 15, during a ribbon-cutting ceremony at its Hickory Point Bank Building location at 225 N. Water St. in Decatur, Ill. The event will begin at 11 a.m.

The idea for the coffee shop was brought forward by Hickory Point Bank, and four Millikin business students worked on the concept for the business. The students tested the concept by opening a one-week pop-up shop as a hands-on market feasibility test from April 3-7, 2017.

Blue Brew will be positioned as an entrepreneurship laboratory where students run the shop as a course under the facilitation of a faculty member. The goals of the course are to create a financially sustainable laboratory for students and the community to practice with food entrepreneurship; create a visible community outlet to promote its own food innovation competencies; and create channels for continued collaboration among businesses, Millikin, and customers.

In a recent interview with the Herald & Review, Jesse Sargeant, a senior entrepreneurship major from Decatur, said, "Now that we're getting into our groove, it's time to celebrate."

The week-long opening celebration will include raffles and food and drink specials Monday through Friday, Nov. 13-17. The business offers a variety of coffees from local roasters D-Town and Marquis, and JBC Coffee Roasters of Madison, Wis., including lattes, cappuccinos and teas. Blue Brew also offers cake pops, muffins, cookies, cream horns and more.

The event is part of Millikin's celebration of Global Entrepreneurship Week, the world's largest celebration of the innovators and job creators who launch startups that bring ideas to life, drive economic growth and expand human welfare.

"The past month has been spent fine-tuning various aspects of the operation based, in part, on feedback from a growing list of regular customers," said Daniel Rivera, a junior business major from Franksville, Wis.
